These cream puffs are versatile and easy to make. Fill with any flavor you like, using a pudding mix to make it even easier. Be sure to refrigerate any leftovers.

1 cup
water

1/2 cup
butter

1 cup
all-purpose flour

1/4 cup
powdered sugar

1 package
pudding mix of your choice (recommend two packages)

Pre-heat oven to 400 degrees.

In a saucepan, bring water and butter to a boil.

Add flour to boiling water/butter mixture.

Turn heat to low and stir mixture quickly. Once it forms a ball, remove from heat.

Add egg, beating after each addition until mixture is smooth.

Drop dough onto parchment-lined baking sheet. Pastry will puff up but not expand, so make them the size you want the final product to be.

Bake about 30-35 minutes (shorter time if you’ve made small puffs). Remove from oven when lightly browned; let cool.

Once cool, cut off tops and scoop out the insides of the puffs. Hang onto the tops as you’ll use them after the cream is added.

Prepare pudding, using a mix OR prepare your own recipe. Let it cool.

Fill dried puffs with pudding, add reserved top, and sprinkle with powdered sugar.

Serve warm or cold.
