If you are a fan of Cadbury® Caramel Bars, or perhaps have some leftover Halloween candy (it happens) you’d like to get out of temptations way, here’s a great bar cookie for you. It fits our standard of easy, as long as you carefully temper the chocolate bar as you melt it, stirring frequently. It also meets our standard of delicious, and it just oozes nuts, caramel and chocolate.

8 oz.
Cadbury Caramel Bars (two 4 oz bars or equivalent of smaller candies)

1/3 cup
heavy cream

1 cup
flour

1/2 t.
baking soda

1/4 t.
salt

3/4 cup
brown sugar, firmly packed

1 cup
dry oatmeal

3/4 cup
butter (one and 1/2 sticks)

1/2 cup
chocolate chips

1/2 cup
walnuts (or can use pecans), chopped

Heat candy and cream in microwave, stirring every 30 seconds, for about 1 1/2 minutes total. Set aside but keep stirring to maintain loose texture.

Mix together flour, baking soca, and salt.

Add to dry mixture the brown sugar and the oatmeal.

Using two knives or the pastry attachment on your mixer, cut in the butter until mixture is crumbly.

Butter a square 8 x 8 or 9 x 9 pan.

Pour HALF of the crumb mixture into the pan and press it down firmly.

Bake at 350 degrees for 12-15 minutes.

Remove from oven and sprinkle nuts and chocolate chips evenly over the top.

Pour candy mixture evenly over the top.

Top with remaining half of the crumb mixture.

Return to the oven and bake another 20 minutes. Top should be lightly browned.

Let cool until candy filling appears set.
